These Caprese and Olive Appetizers are stupid easy (my favorite kind of way to cook!) to whip together and offer a little something for everyone’s tastebuds. My husband isn’t a tomato fan, so I got a little creative and used black olives on a few of the skewers to offer a substitute for tomato haters (the tragedy!).
INGREDIENTS
6 grape tomatoes (or any snacking tomato)
6 black olives
12 mozzarella balls
4-5 basil leaves
3-4 tablespoons balsamic vinaigrette
small toothpicks or wood skewers
DIRECTIONS
1. Skewer a piece of mozzarella on your toothpick or wood skewer.
2. Skewer a tomato over the mozzarella.
3. Set aside on serving tray.
4. Repeat, alternating between tomatoes & olives until all have been used; set aside.
5. Dice up basil, ensuring small chop that’s easy to sprinkle.
6. Sprinkle basil over skewers.
7. Drizzle balsamic vinaigrette over all skewers.
8. Serve immediately.
