Recipe: Baked Chocolate Chip Oatmeal

Baked oatmeal is one of my favorite breakfasts and when I add chocolate, it becomes one of my kids’ faves too. Mornings are the busiest time of day for my family, which is why I love this simple to make, easy to freeze baked breakfasts like this one. Simply freeze individual sized portions for a quick, wholesome, filling breakfast.

Ingredients

* 1½ cups quick cooking oats

* 1½ cups rolled oats

* 1 cup brown sugar, packed

* 2 teaspoons baking powder

* 1 teaspoon cinnamon

* 1 teaspoon salt

* 1 cup milk (almond or dairy)

* ½ cup butter, melted

* 2 eggs, beaten

* ¼-1/2 cup chocolate chips

Instructions

1. In a large mixing bowl, combine all ingredients until oats or thoroughly coated.

2. Transfer mixture to a square baking dish.

3. Bake at 350 degrees for 30-35 minutes.
